  • Lemongrass

  • Galangal

  • Kaffir lime leaves

  • Coriander root

  • Garlic

  • Shallots

  • Shrimp paste (Potential Allergen: Shellfish)

  • Thai basil

2. Coconut Milk

  • Full-fat coconut milk (Potential Allergen: Coconut)

3. Vegetables

  • 2 types of Thai eggplant:

  • Makuea Puang - that one looks like a pea - only it isn't!

  • Makuea Pro - that one looks like a wedge of lime

  • Onions; and other green vegetables according to market availability

4. Seasonings

  • Fish sauce (Potential Allergen: Fish)

  • Palm sugar

  • Thai basil leaves (fresh)
